When we started to research the history, we discovered that is not as straightforward of a story as we first believed. In fact, much of the information about the beginnings and traditions that you easily find available in books and on the Internet are fictitious. As with any well constructed story of fiction there is a grain of truth that runs through it to hold all the pieces together. A common belief is that the wedding cake has its roots in roman times. You can find many articles about how the Romans would take the cake (which at that time would have been more like a bread) and crumble it over the head of the bride. The funny thing is, there isn’t much information available to validate this theory. Much of the history you can read about today actually came from an author and the late 18th and 19th century, I believe. You see, during that time period the affluent in Britain believed that appropriate modern practices would have direct ties to Rome. So when J.C. Jeaffreson published his well respected work brides and Bridals in 1872 giving legitimacy to his fictional history tied to the Romans no one ever questioned it. Because it was the definitive book on the subject, future authors built up on this fictional history in over time it became accepted as fact. Because of this brides and Bridals might be one of the greatest works of fiction in the last 200 years. Interestingly enough, the history of this dessert as we know it today, as a major part of the ceremony, didn’t really come into existence until the 19th and 20th centuries.

Many of the traditions that we have regarding the wedding cake come from the very wealthy and affluent who dictated acceptable or required etiquette. This is actually the reason why they are white, traditionally. Once upon a time, only the wealthy could afford sugar that had been refined enough to produce the white icing. Because of this the traditional white color that we see today as plain was once only something the upper class of society could afford. So as the cost on refining sugar became reasonable brides everywhere wanted a white wedding cake, which they can now afford. Some people believe that the white coloration is meant as a symbol of purity, much in the same way that a bride’s dress is white to symbolize purity. This isn’t the case. The white color became tradition because so many brides want to have the same thing as the very wealthy.
